Eclat Bubbles is a Charmat-method sparkling white wine and a certified VQA wine created entirely of Aligote , one of the rarest varieties growing in Ontario and with roots in Burgundy. One of the most unique vineyard locations in the nation, St. Davids’ Bench in Niagara-on-the-Lake, is home to Chateau des Charmes.
Eclat Bubbles' distinctive lift and purity come from the Charmat technique, which protects the grape's natural freshness and aromatics through secondary fermentation in a pressurized tank rather than a single bottle. The end product is a white sparkling wine that maintains its character while seeming effortless and light in the glass.

What It Tastes Like
