Winemaker's Notes
Our Blanc de Blancs sparkling is a made from 100% Chardonnay grapes using the traditional method. We bottle age this wine on the lees for a minimum of two years and disgorge each bottle just before it leaves our hands, the practice of “RD” or recently disgorged; a sign of quality and attention to detail on the part of the producer. This is a crisp and refreshing wine that engages all your senses. Creamy vanilla, citrus and fresh baked bread notes are lively on the nose. The rich and full mouth feel lingers in your mouth long after you have swallowed.
Vineyard Manager's Notes
The Chardonnay and Pinot Noir for our sparkling wines are among the first grapes we pick each year. We hand select bunches right in the vineyard looking for good ripeness while still retaining high acidity. We include grapes from all four of our vineyard sites in order to help maintain the consistency of aromas and flavours in the cuvée each year. Note that this wine is vintage dated, a rarity among our sparkling wines.

We love good bubbles, any time, anywhere. This is a yummy wine for sipping while making dinner. It’s fresh and crisp so it will also pair with many appetizers; from smoked salmon to grilled scallops.
