6 oz. dark chocolate
1.5 oz. butter
1/2 tsp vanilla
3 egg yolks
1.5 oz. sugar
1/4 cup + 2 tbsp ground almonds
3 egg whites
1 oz. sugar
Melt chocolate and butter. Add vanilla and mix in the ground
almonds. Whisk egg yolks and 1.5 oz. sugar till pale and thick.
Then add to the chocolate/almond mixture. Whisk egg whites
and 1 oz. sugar until soft peaks form. Then fold into the
mix.
Butter small cups, molds or rings. Bake at 380 degrees till
top is dry (approximately 8 - 10 minutes depending on what
size mold is used) Serve warm with sour cherries flambéed
in Grand Marnier.
